One Egg Lemon Pound Cake

Bread Maker Machine FattyGrub has been on a roll. He does love this toy and I have to admit that the bread is cheap and as good as it gets. Here is his attempt to make a cake. I know it is a little sad in look, as one should be sure to let it sit for a while in the pan before taking it out to cool. However, this is one tasty treat.

I suspect he was inspired to make it after overhearing me and my mother talking on the phone. You see it seems that she was feeling a little sick yesterday from eating 1/2 a pound cake.

One Egg Lemon Pound Cake

INGREDIENTS

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup white sugar
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract (used

    , I got a great deal on a bag of lemons for $2.50
    at Walmart the other day

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8×4
    inch loaf pan.
  2.  In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter.
    Break 1 egg into a measuring cup and then fill to the 1 cup line with milk.
    Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
  3.  Pour batter into an 8×4 inch loaf pan. Bake at 350 degrees F (175 degrees
    C) for 30 minutes or until a toothpick inserted into the center of cake
    comes out clean.
